Herbs have always been part of the diet, especially in certain cultures. Herbs are used in salads, oils, vinegars, mustards, jellies, preserves and in cooking. The integration of herbs into every meals can provide tremendous health benefits and is an effective way to prevent disease.

Culinary herbs are either used with fresh or dried herbs. When using fresh herbs you will typically needs twice as much fresh as you would dried herbs. Although dried herbs have lost some oils, they are more concentrated. Store dried herbs in air tight containers away sunlight and heat. Dried herbs make a wonderful salt substitute.
